Description

Whole Chicken Broth:

  • 1 whole chicken (about 3–4 pounds)
  • 10 cups water
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 bay leaf

Additional Ingredients:

  • 3 large carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 12 ounces egg noodles (preferably homestyle Amish-style noodles)
  • 1 tablespoon butter
  • 1/2 cup whole milk or heavy cream (optional for creamier texture)
  • Fresh parsley for garnish


Instructions

  1. Prepare the Chicken Broth: In a large stockpot, combine the whole chicken, water, salt, pepper, garlic powder, onion powder, and bay leaf. Bring to a boil, then simmer for about 1 hour.
  2. Cook Vegetables: Remove the chicken, strain the broth, and return it to the pot. Add carrots, celery, and onion. Simmer until vegetables are tender.
  3. Shred Chicken: Shred the cooked chicken, discarding skin and bones.
  4. Add Noodles: Add shredded chicken and egg noodles to the pot. Simmer until noodles are cooked.
  5. Finish the Dish: Stir in butter and milk/cream if using. Adjust seasoning. Garnish with parsley before serving.

Notes

  • For a thicker consistency, reduce broth or add a cornstarch slurry.
