Main Ingredients
- 2 pounds stew beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 ounce envelope birria seasoning packet
- 1 cup beef stock
- 12 count Hawaiian rolls
- 6 slices Colby Jack cheese
- 2 tablespoons butter
- 1/2 teaspoon garlic salt
- 1 tablespoon parsley or cilantro, chopped
Toppings
- Cilantro
- Red onion, sliced
- Lime wedges
- Jalapeno slices
Instructions
- Prepare the Slow Cooker: Add the stew beef, chopped onion, minced garlic, birria seasoning packet, and beef stock into your slow cooker.
- Slow Cook the Beef: Cook on low heat for 4 to 6 hours until the beef is very tender and easy to shred.
- Preheat Oven: When beef is done, preheat your oven to 350°F (175°C).
- Prepare Rolls: Slice the Hawaiian rolls in half horizontally and arrange the bottom halves in a 9×13-inch baking dish.
- Add Cheese: Place the slices of Colby Jack cheese evenly on the bottom halves of the rolls.
- Assemble Sliders: Top the cheese with the shredded beef and desired toppings such as cilantro, red onion, and jalapenos. Cover with the top halves of the rolls.
- Make Garlic Butter: In a small microwave-safe bowl, melt the butter mixed with garlic salt and chopped parsley or cilantro in 30-second intervals until fully melted and combined.
- Brush Rolls: Generously brush the garlic butter mixture over the top halves of the rolls.
- Bake Sliders: Place the baking dish in the oven and bake for 12 to 15 minutes or until the cheese has melted and the tops are golden.
- Serve: Serve the sliders hot with the beef cooking liquid from the slow cooker for dipping and lime wedges for squeezing over the top.
Notes
- For extra flavor, you can toast the rolls lightly before assembling.
- The cooking time in the slow cooker can vary depending on your model; check that the beef is tender enough to shred easily.
- Adjust the toppings to your taste preferences, adding more jalapenos for heat or extra cilantro for freshness.
- Use low-sodium beef stock if you want to control the saltiness of the dish.
