Description

These Blackberry Cheesecake Bites are delightful no-bake treats perfect for any occasion. Combining a crumbly shortbread cookie crust with a creamy, vanilla-flavored cheesecake filling and topped with fresh blackberries, they offer a refreshing burst of flavor in every bite. Easy to prepare and visually appealing, they make a great dessert or party snack.

Ingredients

Scale

Crust

  • 1 package of Shortbread cookies (10 – 12 ounces)
  • 1 Tablespoon of sugar
  • 1/3 cup of butter – melted

Cheesecake Filling

  • 5 – 8 ounce packages of cream cheese – softened
  • 1/2 cup of heavy cream
  • 1 Tablespoon of Vanilla extract
  • 2 Tablespoons of granulated sugar
  • 2 cups of powdered sugar

Topping

  • 1 pint of Blackberries – washed
  • Purple gel food coloring (optional)

Instructions

  1. Prepare the Crust: Crush the shortbread cookies finely using a food processor or by placing them in a sealed bag and crushing with a rolling pin. Mix the crushed cookies with 1 tablespoon sugar and melted butter until the mixture resembles wet sand. Press this mixture firmly into the base of mini muffin tins or silicone molds to form bite-sized crusts. Chill in the refrigerator while preparing the filling.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the granulated sugar and powdered sugar gradually, continuing to beat until fully incorporated. Pour in the heavy cream and vanilla extract, and beat the mixture until it becomes light and fluffy. Optionally, add a small amount of purple gel food coloring to give the filling a subtle hue that complements the blackberries.
  3. Assemble the Bites: Spoon or pipe the cheesecake filling over the chilled crusts in the molds, filling them almost to the top.
  4. Add the Blackberry Topping: Carefully place one fresh blackberry atop each cheesecake bite for a decorative and flavorful touch.
  5. Chill to Set: Place the assembled cheesecake bites in the refrigerator for at least 1 hour, allowing them to set and firm up properly before serving.
  6. Serve and Enjoy: Once chilled, carefully remove the bites from the molds and arrange them on a serving platter. Enjoy these creamy, fruity treats cold.

Notes

  • Ensure the cream cheese is fully softened to avoid lumps in the filling.
  • If you do not have purple gel food coloring, you can omit it without affecting the flavor.
  • Use fresh, firm blackberries to avoid excess juice making the bites soggy.
  • These bites should be stored in the refrigerator and eaten within 2-3 days for best freshness.
  • To speed chilling, place bites in the freezer for 20 minutes, then move to refrigerator until serving.
