Description

Boxty are traditional Irish potato pancakes made with a combination of raw shredded potatoes and mashed potatoes, mixed with flour, baking powder, and spices. These crispy, golden pancakes are cooked in a skillet and make a comforting and satisfying dish perfect for breakfast, brunch, or a side meal.

Instructions

  1. Make batter: Combine all ingredients except for the butter or oil in a large bowl. Mix thoroughly. If needed, add another 1-2 tablespoons of milk until the batter reaches the consistency of a thick, messy pancake batter.
  2. Cook: Heat a skillet over medium-high heat and add butter or oil to coat the surface. Spoon a heaping tablespoon of batter per pancake into the hot skillet. Cook each side for about 3-4 minutes, or until golden brown and cooked through. Serve hot immediately.
