- 2 pinches ground nutmeg
Wet Ingredients
- 2 large eggs
- 3-4 tablespoons milk (plus extra 1-2 tablespoons if needed)

Instructions
- Make batter: Combine all ingredients except for the butter or oil in a large bowl. Mix thoroughly. If needed, add another 1-2 tablespoons of milk until the batter reaches the consistency of a thick, messy pancake batter.
- Cook: Heat a skillet over medium-high heat and add butter or oil to coat the surface. Spoon a heaping tablespoon of batter per pancake into the hot skillet. Cook each side for about 3-4 minutes, or until golden brown and cooked through. Serve hot immediately.

- Squeezing out excess liquid from the raw shredded potatoes is crucial to avoid a soggy batter.
- Leftover mashed potatoes work well and add extra flavor and moisture to the batter.
