- 4 tablespoons soft butter (divided)
Instructions
- Cook the Sausage: In a non-stick skillet over medium heat, cook the ground breakfast sausage until it is browned and crumbled. Once cooked, place the sausage on paper towels to drain excess grease and set aside.
- Scramble the Eggs: Using the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour in the beaten eggs and scramble them gently, cooking until just set but still moist. Remove from heat.
- Combine Eggs and Sausage: In a mixing bowl, combine the scrambled eggs with the cooked sausage, mixing gently to distribute evenly.
- Assemble the Sandwiches: Butter one side of each slice of sourdough bread. On the unbuttered side, layer one slice of Colby-Jack cheese, followed by a generous portion of the egg and sausage mixture, then top with another slice of cheese. Close the sandwich with another slice of bread, buttered side out.
- Grill the Sandwiches: Heat the skillet over medium heat and place the sandwiches in the skillet. Grill each sandwich until the bread is golden brown and crispy, and the cheese is melted, about 3–4 minutes per side. Flip carefully to cook the other side evenly.
