- ¼ cup sour cream
- 1 cup shredded cheddar cheese
- 1 ½ cups cooked shredded chicken
- â…“ cup crumbled blue cheese, divided
- Sliced green onion, for garnish
Assembly
- 4 medium-sized 6″ tortillas
Instructions

- Add cheeses and chicken: Fold in the shredded cheddar cheese, cooked shredded chicken, and ¼ cup of the crumbled blue cheese evenly into the mixture.
- Spread on tortillas: Generously spread approximately 2 tablespoons of the prepared filling over the entire surface of each 6-inch tortilla, ensuring an even layer for rolling.
- Add toppings and roll: Sprinkle sliced green onions and the remaining blue cheese over the filling, then carefully roll up each tortilla tightly.
- Chill before slicing: Refrigerate the rolled tortillas for at least 1 hour to allow flavors to meld and the filling to firm up, making them easier to slice.
- Slice and serve: After chilling, slice each roll into ½ inch pieces and garnish with additional blue cheese and green onions if desired before serving.
Notes
- Use cooked shredded chicken for convenience; rotisserie chicken works well.
- Chilling the roll ups before slicing helps maintain their shape and makes serving easier.
- Adjust the amount of buffalo sauce according to your preferred spice level.
- These roll ups can be made a day ahead and stored covered in the refrigerator.
- Serve with extra buffalo sauce or ranch dressing for dipping, if desired.
