Instructions

  1. Prepare the crust: In a bowl, combine the cinnamon graham cracker crumbs, sugar, and melted butter. Stir until the mixture is evenly moistened. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer. Set aside.
  2. Make the cream cheese layer: In a mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the whipping cream until stiff peaks form, then gently fold it into the cream cheese mixture until well combined. This will create a light, fluffy texture.
  3. Prepare the pudding layer: In another bowl, whisk together the instant butterscotch pudding mix, 2 cups cold milk (as per package instructions), and the ½ cup chopped butterscotch chips. Continue whisking until the mixture thickens, approximately 2 minutes. Let it sit a few minutes if needed to fully set.
  4. Assemble the layers: Spread half of the cream cheese mixture evenly over the prepared graham cracker crust. Next, pour and spread all of the prepared pudding mixture over the cream cheese layer. Then, carefully layer the remaining cream cheese mixture on top, smoothing it out evenly.
