Description

Delicious and crispy cauliflower fritters made with tender mashed cauliflower, Parmesan cheese, and seasonings, perfect as a healthy appetizer or side dish. These fritters are easy to prepare on the stovetop and can be customized with gluten-free or low-carb flour alternatives.

  • 1 medium head cauliflower (cut into florets)
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour (or almond flour for low-carb)
  • 2 green onions (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 2 tablespoons chopped parsley
  • Olive oil or vegetable oil for frying


Instructions

  1. Cook Cauliflower: Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 5–7 minutes until tender. Drain well.
  2. Mash Cauliflower: Mash the cooked cauliflower with a fork or potato masher until mostly smooth, leaving some small chunks for texture. Let it cool slightly.
  3. Mix Ingredients: In a bowl, combine the mashed cauliflower with eggs, Parmesan cheese, flour, green onions, minced garlic, salt, black pepper, paprika, and chopped parsley. Stir until well combined.
  4. Heat Oil: Heat a thin layer of olive or vegetable oil in a nonstick skillet over medium heat.
  5. Form and Cook Fritters: Scoop about 2 tablespoons of the mixture per fritter into the skillet, flattening slightly with the back of a spoon. Cook for 3–4 minutes on each side or until golden brown and crisp.
  6. Drain and Serve: Remove fritters and drain on paper towels to remove excess oil. Repeat cooking with remaining batter, adding more oil if necessary. Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce.
