- 2 green chilies, chopped
- 2 medium carrots, grated

- 2 medium tomatoes, chopped
Seasonings:
- 1 can (14 ounces) baked beans in tomato sauce
- 2 teaspoons curry powder
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Garnish:
- 1/4 cup chopped fresh cilantro
Instructions
- Sauté Aromatics: Heat oil in a skillet, sauté onion, garlic, ginger, and chilies until fragrant.
- Add Veggies: Stir in carrots, bell peppers, cook until tender.
- Season: Add curry powder, paprika, coriander, cayenne, salt, and pepper.
- Simmer: Mix in tomatoes, beans, simmer for 10-15 minutes.
- Finish: Remove from heat, stir in cilantro, and serve.
