Ingredients
Scale
Protein
- 1 lb (450g) boneless skinless chicken breasts, thinly sliced
Vegetables
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
Sauces and Liquids
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1/2 cup chicken broth
- 1 tablespoon cornstarch
Oils and Seasonings
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Optional Garnishes
- Sesame seeds
- Chopped green onions
Instructions
- Prepare the sauce mixture: In a small bowl, combine the soy sauce, oyster sauce, cornstarch, and chicken broth. Stir until the cornstarch is fully dissolved and the mixture is smooth. Set aside to use later.
- Cook the chicken: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the thinly sliced chicken breasts, seasoning them with salt and pepper. Stir-fry for 5-7 minutes until the chicken is fully cooked and has a golden-brown exterior. Remove the chicken from the pan and set aside.
- Sauté aromatics: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and fresh ginger, cooking for about 30 seconds until fragrant but not burnt.
- Cook vegetables: Add the broccoli florets and sliced red bell pepper to the pan. Stir-fry the vegetables for 3-5 minutes until they are tender-crisp, maintaining their vibrant color and slight crunch.
- Combine chicken and vegetables: Return the cooked chicken to the pan with the vegetables. Pour the prepared sauce mixture over them and stir well to evenly coat all the ingredients.
- Thicken the sauce: Continue cooking the mixture, stirring constantly for another 2-3 minutes, until the sauce thickens and clings to the chicken and vegetables beautifully.
- Garnish and serve: Remove the stir fry from heat. Optionally, sprinkle with sesame seeds and chopped green onions for added texture and flavor. Serve hot alongside steamed rice or noodles for a complete meal.
Notes
- For extra heat, add a sliced chili or a splash of chili sauce when cooking the garlic and ginger.
- If you prefer a gluten-free version, substitute tamari for soy sauce and ensure oyster sauce is gluten-free or use a mushroom-based alternative.
- You can swap chicken breast for thigh meat if you want a juicier bite.
- The sauce can be adjusted in sweetness or saltiness by adding a small amount of sugar or reducing soy sauce.
- Be careful not to overcook the broccoli; it should remain slightly crisp for best texture.
