Description

This delicious Chicken and Broccoli Stir Fry is a quick and healthy meal featuring tender chicken breast, fresh broccoli, and colorful red bell pepper, all tossed in a savory soy and oyster sauce. Perfect for a weeknight dinner, this stir fry is packed with flavor and can be served over steamed rice or noodles for a satisfying meal.

Ingredients

Scale

Protein

  • 1 lb (450g) boneless skinless chicken breasts, thinly sliced

Vegetables

  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauces and Liquids

  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch

Oils and Seasonings

  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Optional Garnishes

  • Sesame seeds
  • Chopped green onions

Instructions

  1. Prepare the sauce mixture: In a small bowl, combine the soy sauce, oyster sauce, cornstarch, and chicken broth. Stir until the cornstarch is fully dissolved and the mixture is smooth. Set aside to use later.
  2. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the thinly sliced chicken breasts, seasoning them with salt and pepper. Stir-fry for 5-7 minutes until the chicken is fully cooked and has a golden-brown exterior. Remove the chicken from the pan and set aside.
  3. Sauté aromatics: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and fresh ginger, cooking for about 30 seconds until fragrant but not burnt.
  4. Cook vegetables: Add the broccoli florets and sliced red bell pepper to the pan. Stir-fry the vegetables for 3-5 minutes until they are tender-crisp, maintaining their vibrant color and slight crunch.
  5. Combine chicken and vegetables: Return the cooked chicken to the pan with the vegetables. Pour the prepared sauce mixture over them and stir well to evenly coat all the ingredients.
  6. Thicken the sauce: Continue cooking the mixture, stirring constantly for another 2-3 minutes, until the sauce thickens and clings to the chicken and vegetables beautifully.
  7. Garnish and serve: Remove the stir fry from heat. Optionally, sprinkle with sesame seeds and chopped green onions for added texture and flavor. Serve hot alongside steamed rice or noodles for a complete meal.

Notes

  • For extra heat, add a sliced chili or a splash of chili sauce when cooking the garlic and ginger.
  • If you prefer a gluten-free version, substitute tamari for soy sauce and ensure oyster sauce is gluten-free or use a mushroom-based alternative.
  • You can swap chicken breast for thigh meat if you want a juicier bite.
  • The sauce can be adjusted in sweetness or saltiness by adding a small amount of sugar or reducing soy sauce.
  • Be careful not to overcook the broccoli; it should remain slightly crisp for best texture.
