Description

Chunky Monkey Frozen Yogurt Bark is a refreshing and healthy treat combining creamy Greek yogurt, rich peanut butter, sweet bananas, melted chocolate, and crunchy peanuts. This no-bake dessert is easy to prepare, perfect for a quick snack or a guilt-free indulgence, and requires just a few ingredients and some freezer time.

Ingredients

Scale

Yogurt Mixture

  • 1 (5.3-ounce) container plain full-fat Greek yogurt
  • ½ cup smooth peanut butter
  • 1-2 tablespoons honey (to taste)
  • ¼ teaspoon salt (optional)

Toppings

  • 2 large bananas, thinly sliced
  • ½ cup melted chocolate chips
  • ¼ cup roasted and salted peanuts, crushed

Instructions

  1. Prepare the yogurt mixture: In a medium-sized bowl, combine the plain Greek yogurt, smooth peanut butter, honey, and optional salt. Whisk all ingredients together thoroughly until the mixture is smooth and well combined.
  2. Spread the mixture: Line a large baking sheet with parchment paper. Using a spatula, spread the peanut butter yogurt mixture evenly on the baking sheet, aiming for a 9×11-inch rectangle shape.
  3. Add toppings and freeze: Press the thinly sliced banana pieces into the yogurt mixture in 6 rows of 8 slices each. Drizzle the melted chocolate evenly over the top, then sprinkle with crushed roasted and salted peanuts. Place the baking sheet in the freezer and allow the bark to firm up for at least 4 hours.
  4. Serve and store: Once firm, break the frozen yogurt bark into pieces. Store in a freezer-safe bag for up to 1 week. For the best texture, let the bark thaw for about 5 minutes before eating. Be aware that it may start to melt if left out at room temperature for more than 15 minutes.

Notes

  • Use full-fat Greek yogurt for the creamiest texture and best flavor.
  • Honey can be adjusted based on your preferred sweetness level.
  • Optional salt enhances the flavors but can be omitted if desired.
  • Freeze the bark until completely firm to ensure easy breaking into pieces.
  • Consume within one week for optimal freshness.
