Description

  • 4 cups romaine lettuce (chopped or preferred mix of greens)
  • 2 cups chicken (cooked, sliced or diced)
  • 6 pieces bacon (cooked and diced)
  • 4 eggs (boiled, peeled and sliced)
  • 1 large avocado (pitted and sliced or diced)
  • 1 cup cherry tomatoes (halved)
  • ¼ cup red onion (sliced)

Dressing Ingredients

  • ¼ cup Dijon mustard (plus 1 tablespoon)
  • 3 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper


Instructions

  1. Prepare the dressing: In a small mixing bowl, whisk together the honey, Dijon mustard (¼ cup plus 1 tablespoon), olive oil, apple cider vinegar, garlic powder, kosher salt, and black pepper until well combined. Alternatively, add all dressing ingredients to a mason jar, seal it, and shake until emulsified. Taste and adjust salt and pepper as desired. Set the dressing aside.
  2. Prepare salad ingredients: Slice or dice the cooked chicken as preferred. Peel and slice the boiled eggs. Wash and dice the avocado, and halve the cherry tomatoes. Slice the red onion thinly. Chop or prepare your preferred greens, such as romaine lettuce.
  3. Assemble the salad: Place the chopped romaine lettuce or greens in the bottom of a large serving bowl. Arrange the sliced chicken, diced bacon, sliced eggs, avocado, cherry tomatoes, and red onions on top of the lettuce in an even layer or in sections.
  4. Toss and serve: Drizzle the prepared honey Dijon dressing over the salad. Gently toss the salad to evenly coat all ingredients with the dressing. Serve immediately and enjoy the fresh flavors and hearty textures.
