Ingredients
Scale
Coconut Filling
- 2 cups sweetened shredded coconut
- 1/4 cup coconut oil, melted
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Chocolate Coating
- 8 oz dark chocolate or semi-sweet chocolate (for coating)
Instructions
- Prepare the Coconut Filling: In a mixing bowl, combine the shredded coconut, melted coconut oil, powdered sugar, vanilla extract, and salt. Stir until the mixture is well combined and sticky.
- Shape the Filling: Roll the coconut mixture into small balls or spoon portions onto a parchment-lined tray. Flatten each ball slightly to form small discs.
- Chill: Place the coconut discs in the refrigerator for about 30 minutes to firm up.
- Melt the Chocolate: While the coconut discs are chilling, melt the chocolate in a microwave-safe bowl or over a double boiler. Stir the chocolate until it’s completely smooth.
- Coat the Coconut: Once the coconut discs have firmed up, dip each one into the melted chocolate, covering it completely. Use a fork to remove them from the chocolate and place them back onto the parchment paper.
- Let the Chocolate Set: Allow the coated chocolates to set at room temperature or in the refrigerator until the chocolate hardens.
- Serve & Enjoy: Once the chocolates are fully set, they’re ready to enjoy!
Notes
- You can substitute the dark chocolate with semi-sweet or milk chocolate if desired.
- For a dairy-free option, ensure the chocolate you use is dairy-free.
- Store the chocolates in an airtight container in the refrigerator to keep them fresh longer.
- Adding chopped nuts to the coconut mixture can provide extra texture and flavor.
- Make sure the coconut discs are firm before dipping to avoid breaking.
