- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 large heads garlic, separated into cloves and peeled
- 1 large onion, sliced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 8 cups chicken or vegetable broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For serving:
- 4 large egg yolks
- 1/2 cup grated Parmesan cheese
- 4 slices rustic French bread, toasted
- Extra Parmesan and fresh parsley for garnish
Instructions
- Prepare the soup: Heat olive oil and butter in a large pot over medium heat. Add garlic cloves and cook until golden and fragrant. Add onion, carrots, and celery, and cook until softened. Pour in broth and add thyme, bay leaves, salt, and pepper. Simmer for 30 minutes. Remove thyme and bay leaves.
- Blend the soup: Use an immersion blender to blend the soup until smooth and creamy.
- Prepare the egg mixture: In a small bowl, whisk egg yolks with Parmesan. Slowly whisk in a ladleful of hot soup, then stir the mixture back into the pot.
- Simmer the soup: Simmer gently for 2–3 minutes without boiling.
- Serve: Ladle the soup into bowls, top with a slice of toasted French bread, Parmesan, and parsley. Serve hot.
Notes
- For a rustic version, leave some garlic cloves whole instead of blending.
