Ingredients
Scale
Bread
- 16 ounces French bread (1 loaf, cut into slices)
Spread
- 16 ounces reduced-fat cream cheese (2 bricks, room temperature)
- 1 cup mayonnaise with olive oil
- ¼ cup light sour cream
- 2 garlic cloves (minced)
- 14 ounces canned marinated artichoke hearts (1 can, drained and chopped)
- ½ teaspoon garlic salt
- 1 tablespoon dried parsley
- 1 cup grated Parmesan cheese
Topping
- 1 cup shredded Parmesan cheese
- ½ cup shredded mozzarella cheese
- Olive oil for brushing or spraying bread
Instructions
- Preheat and prepare bread: Preheat your oven to 350°F (175°C). Place the sliced French bread on a foil-lined baking sheet and brush or spray each slice lightly with olive oil to ensure crispiness when baked.
- Bake the bread: Bake the bread slices for 8-10 minutes until they turn crispy and golden brown. Once done, remove from the oven and set aside.
- Make the artichoke spread: In a stand mixer fitted with the paddle attachment, combine the reduced-fat cream cheese, mayonnaise, light sour cream, minced garlic, chopped marinated artichoke hearts, garlic salt, dried parsley, and grated Parmesan cheese. Beat all ingredients until the mixture is smooth and well combined.
- Assemble the bruschetta: Use a spoon to generously scoop the creamy artichoke mixture onto each toasted bread slice. Evenly sprinkle shredded Parmesan cheese over the top of each spread slice.
- Broil the bruschetta: Place the prepared slices under the oven broiler for 5-7 minutes, watching closely to avoid burning. Broil until the cheese is bubbly and slightly browned on top for a perfect finish.
Notes
- Keep a close eye while broiling to prevent the cheese from burning.
- You can prepare the spread ahead and refrigerate it for up to 2 days before assembling and broiling.
- For an extra garlic kick, rub the toasted bread slices with a fresh garlic clove before spreading.
- If you prefer a richer flavor, substitute light sour cream with regular sour cream and use full-fat cream cheese.
