  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 2 3/4 cups whole milk
  • 1/2 cup heavy cream
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons vanilla extract


Instructions

  1. In a medium saucepan, whisk together the brown sugar, cornstarch, and salt. Gradually add the milk and cream, whisking until smooth.
  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to bubble and thicken, about 5–7 minutes.
  3. In a separate small bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot pudding mixture into the yolks while whisking constantly to temper them. Then pour the yolk mixture back into the saucepan.
  4. Cook for another 2–3 minutes, stirring constantly, until thickened and silky. Remove from heat and stir in the butter and vanilla extract until fully incorporated.
  5. Pour the pudding into individual serving dishes and cover each with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill for at least 2 hours before serving.
