- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 2 3/4 cups whole milk
- 1/2 cup heavy cream
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons vanilla extract
Instructions
- In a medium saucepan, whisk together the brown sugar, cornstarch, and salt. Gradually add the milk and cream, whisking until smooth.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to bubble and thicken, about 5–7 minutes.
- In a separate small bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot pudding mixture into the yolks while whisking constantly to temper them. Then pour the yolk mixture back into the saucepan.
- Cook for another 2–3 minutes, stirring constantly, until thickened and silky. Remove from heat and stir in the butter and vanilla extract until fully incorporated.
- Pour the pudding into individual serving dishes and cover each with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill for at least 2 hours before serving.
