Instructions
- Cook the sausage: Remove the Italian sausage from its casing and crumble it into a large pot over medium-high heat. Cook until browned and no longer pink, ensuring it’s fully cooked through.
- Set aside cooked sausage: Remove the cooked sausage from the pot and set it aside on a plate to be added back later.
- Sauté onion: Add olive oil to the same pot and sauté the diced onion until translucent, approximately 3-5 minutes, stirring occasionally to prevent burning.
- Cook garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, careful not to let it brown excessively.
- Add broth and simmer: Pour in the chicken broth and bring to a simmer. Scrape up any browned bits from the bottom of the pot to add extra flavor to the soup.
- Return sausage to pot: Add the cooked sausage back to the pot and let the soup simmer gently for about 10 minutes to blend flavors.
- Add cream and cheese: Stir in the heavy cream, grated Parmesan cheese, Italian seasoning, salt, and pepper. Simmer for another 5 minutes to thicken the soup and meld the flavors.
- Add kale: Mix in the chopped kale and cook until wilted, about 3-5 minutes, stirring occasionally.
