Ingredients
Scale
Shrimp
- 1½ pounds shrimp (peeled and deveined)
- Kosher salt (to taste)
- Ground black pepper (to taste)
Sauce
- ¼ cup unsalted butter (divided; ½ stick or 4 tablespoons)
- ½ cup diced yellow onion
- 6 cloves garlic (minced)
- ½ teaspoon crushed red pepper flakes (plus more to taste)
- â…” cup dry white wine
- 1½ cups heavy cream
- 1 cup grated Parmesan cheese
Garnish and Serving
- Chopped fresh parsley (for garnish)
- Lemon wedges (for garnish)
- Cooked pasta or rice (for serving)
Instructions
- Sauté shrimp: Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the peeled and deveined shrimp, seasoning with kosher salt and black pepper. Cook the shrimp about 1-2 minutes per side until pink and opaque. Remove from the skillet and set aside in a clean bowl.
- Sauté aromatics: Reduce heat to medium-low. Melt the remaining 2 tablespoons of butter in the same skillet. Add diced yellow onions and sauté until softened and translucent, about 3-4 minutes. Add minced garlic and crushed red pepper flakes, cooking until fragrant, approximately 30 seconds.
- Deglaze and reduce: Pour dry white wine into the skillet to deglaze, scraping up any browned bits from the bottom. Bring to a simmer and let the liquid reduce by half, which should take about 10-15 minutes, concentrating the flavors.
- Add cream: Stir in the heavy cream, bringing the mixture back to a simmer. Stir occasionally to combine fully.
- Incorporate Parmesan: Mix in the grated Parmesan cheese and continue to simmer for 1-2 minutes until the cheese melts and the sauce thickens. Taste and adjust seasoning with salt and black pepper as needed.
- Combine shrimp and sauce: Return the cooked shrimp to the skillet, simmering gently for 2-3 minutes until warmed through and fully coated with the creamy Parmesan sauce.
- Garnish and serve: Sprinkle chopped fresh parsley over the dish and serve immediately with lemon wedges on the side. Enjoy over cooked pasta or rice.
Notes
- Use dry white wine such as Sauvignon Blanc or Pinot Grigio for best flavor.
- Adjust crushed red pepper flakes according to your preferred spice level.
- Ensure shrimp is peeled and deveined for the best texture and presentation.
- For a lighter version, substitute heavy cream with half-and-half, although sauce will be less rich and creamy.
- Serve with crusty bread to soak up the delicious sauce.
