Ingredients
Scale
Cookies
- ¾ cup butter
- â…“ cup granulated sugar
- â…“ cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1½ cup all-purpose flour
- ½ tsp salt
- ¼ tsp baking soda
- ½ tsp baking powder
Coating
- 1½ cup graham crackers, finely crushed (divided)
Instructions
- Preheat and prepare baking sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
- Cream butter and sugars: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and fluffy. This creates the base for your cookie dough.
- Add eggs and vanilla: Incorporate the eggs and vanilla extract into the butter and sugar mixture, mixing well to combine and enhance flavor.
- Combine dry ingredients: In a separate bowl, mix the all-purpose flour, salt, baking powder, and baking soda thoroughly. Gradually add these dry ingredients to the wet mixture, stirring until just combined to avoid overmixing.
- Fold in graham crackers: Gently fold in half of the finely crushed graham crackers into the dough, which will add texture inside the cookies.
- Form and coat cookie dough balls: Using a cookie scoop, portion the dough into evenly sized balls. Roll each ball in the remaining crushed graham crackers to coat the outside, giving the cookies their signature crunch and appearance.
- Shape and bake: Place the coated dough balls on the prepared baking sheets, spacing them evenly. Flatten each ball slightly to about ¾ inch thick to promote even baking. Bake in the preheated oven for 8–10 minutes until the edges turn golden brown.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving. This helps them set properly and maintain their texture.
Notes
- Use softened butter for easier creaming and better texture.
- Do not overmix the dough once the flour is added to keep cookies tender.
- Make sure to finely crush the graham crackers for consistency in texture.
- Flattening the dough balls ensures even cooking and the ideal cookie thickness.
- Store cookies in an airtight container at room temperature for up to a week.
- These cookies freeze well; thaw at room temperature before serving.
