Ingredients
Scale
Herb Cream Cheese Spread
- 8 ounces cream cheese (softened)
- 3 tablespoons mayonnaise
- 1 tablespoon sour cream
- 1 tablespoon fresh dill (finely chopped)
- 1 tablespoon fresh chives (finely chopped)
- 1 teaspoon fresh parsley (finely chopped)
- ½ teaspoon garlic powder
- 1 teaspoon lemon juice
- Salt and cracked black pepper (start with 1/8 teaspoon salt and adjust)
Sandwich
- 1 English cucumber (thinly sliced)
- 1 loaf soft white or whole wheat sandwich bread (crusts removed)
Instructions
- Make the spread: Whip the softened cream cheese, mayonnaise, and sour cream together using a hand mixer until the mixture is smooth and fluffy. Then gently stir in the finely chopped dill, chives, parsley, garlic powder, lemon juice, salt, and cracked black pepper until evenly combined, forming a flavorful herb cream cheese spread.
- Assemble sandwiches: Spread a thin, even layer of the herb cream cheese mixture on each slice of the prepared sandwich bread. On half of the slices, layer the thinly sliced cucumber pieces, slightly overlapping to cover the bread evenly. Optionally, sprinkle extra herbs on top of the cucumber for added freshness. Then, place the remaining bread slices on top, cream cheese side down, and press gently to adhere.
- Cut and serve: Trim the edges if desired for a neat presentation. Cut the assembled sandwiches into triangles, squares, or finger sandwich shapes as preferred. Arrange on a platter and serve immediately or keep chilled until ready to serve.
Notes
- For best results, use fresh herbs and thinly slice cucumbers to ensure the sandwiches remain light and refreshing.
- Crust removal is traditional for tea sandwiches but optional based on preference.
- These sandwiches can be prepared a few hours ahead and stored covered in the refrigerator to maintain freshness.
- Adjust seasoning, especially salt and pepper, to taste during the spread preparation.
- For variation, try adding a dash of horseradish or substituting mayonnaise with Greek yogurt for a tangier spread.
