For the Veg Filling

  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 onion, finely chopped
  • ½ capsicum (bell pepper), chopped
  • 1 small carrot, grated
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ½ teaspoon garam masala
  • Salt to taste
  • 2 tablespoons tomato ketchup or sauce
  • 1–2 tablespoons chopped coriander leaves

For Assembly

  • ½ cup shredded mozzarella or processed cheese
  • Butter or oil, for brushing
  • Mixed herbs or chili flakes (optional, for garnish)


Instructions

  1. Prepare the Dough: In a bowl, combine all-purpose flour, salt, and oil. Gradually add water and knead the mixture into a soft, smooth dough. Cover and let it rest for 20 minutes to relax the gluten and make rolling easier.
  2. Cook the Vegetable Filling: Heat oil in a pan over medium heat. Add cumin seeds and allow them to crackle. Stir in ginger-garlic paste and sauté until fragrant. Add finely chopped onion and cook until soft and translucent. Then add chopped capsicum and grated carrot, cooking briefly to tenderize.
  3. Spice and Simmer: Sprinkle turmeric powder, red chili powder, garam masala, and salt over the vegetables. Stir well to combine. Mix in tomato ketchup and cook until the mixture dries out slightly, intensifying the flavors. Remove from heat and fold in chopped coriander leaves. Let the filling cool completely before assembly.
  4. Preheat Oven and Prepare Rolls: Preheat your oven to 180°C (350°F). Line a baking tray with parchment or a silicone mat. Divide the dough into six equal portions and roll each into thin oval shapes suitable for wrapping the filling.
  5. Assemble the Rolls: Place a spoonful of cooled vegetable filling on each oval, sprinkle a layer of shredded mozzarella or processed cheese on top.
