Description

A delicious and hearty Chicken Florentine Grilled Cheese sandwich featuring tender cooked chicken breast, sautéed fresh spinach, and a blend of mozzarella and cheddar cheeses melted between buttery grilled sourdough or whole wheat bread slices. This recipe combines savory flavors and creamy textures for a satisfying meal perfect for lunch or dinner.

Ingredients

Scale

Chicken and Spinach Mixture

  • 1 pound Chicken Breast (Cooked and shredded)
  • 2 cups Fresh Spinach (Washed and stems removed)
  • 1 clove Garlic (Minced)
  • Salt and Pepper (To taste)

Cheese and Bread

  • 8 ounces Cheese (Mozzarella and Cheddar, grated)
  • 4 slices Bread (Thick slices of sourdough or whole wheat)

For Grilling

  • 2 tablespoons Unsalted Butter (For spreading on the bread)
  • 1 teaspoon Olive Oil or Butter (For sautéing garlic and spinach)

Instructions

  1. Cook the Chicken: Season the chicken breast with salt, pepper, and spices. Cook in a skillet over medium heat for 6-7 minutes on each side until cooked through, ensuring the internal temperature reaches 165°F.
  2. Prepare the Spinach: Remove the chicken from the skillet and let it rest. In the same skillet, heat a small amount of olive oil or butter.
  3. Sauté Garlic and Spinach: Sauté the minced garlic for 30 seconds until fragrant, then add the fresh spinach and cook for 2-3 minutes until wilted. Combine the wilted spinach with the shredded chicken in a bowl.
  4. Assemble the Sandwich: On two slices of the bread, evenly spread the chicken and spinach mixture, then sprinkle the grated mozzarella and cheddar cheeses over the filling. Top with the remaining bread slices to form sandwiches.
  5. Grill the Sandwich: Spread butter on the outside of both sides of each sandwich. Heat a skillet over medium heat and grill the sandwiches for 3-4 minutes per side or until the bread is golden brown and the cheese has melted.
  6. Serve: Remove the sandwiches from the skillet, let them cool for a minute to set, then slice in half and serve warm.

Notes

  • Use thick, sturdy bread like sourdough or whole wheat to hold the sandwich filling well and prevent sogginess.
  • Grate the cheese for faster and more even melting inside the sandwich.
  • Adjust seasoning of the chicken with your favorite herbs or spices such as paprika, Italian seasoning, or garlic powder for extra flavor.
  • For a crispier crust, increase the butter slightly or consider using a panini press.
  • Make sure not to overcook the chicken to keep it juicy and tender.
