Ingredients
Scale
Cake Layers
- 1 box strawberry cake mix
- 1 box lemon cake mix
- 2 cans 7 Up or other lemon-lime soda
Frosting
- Vanilla Buttercream frosting (prepared according to package instructions or your favorite recipe)
Decorations
- Easter Bunny cake topper with ears, nose, and eyes (optional)
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease three 6-inch round baking pans to prevent sticking and set aside.
- Mix Strawberry Layer: In a large bowl, combine the strawberry cake mix with one can of 7 Up (or your preferred lemon-lime soda). Mix until fully incorporated and smooth.
- Mix Lemon Layer: In a separate large bowl, combine the lemon cake mix with the remaining can of 7 Up. Stir until smooth.
- Create Batter and Bake: Divide both batters into thirds. For the swirl layer, mix together one third of the strawberry batter and one third of the lemon batter lightly to create a marbled effect. Pour the strawberry batter into one pan, the lemon batter into another, and the swirled batter into the third pan. Bake all three pans simultaneously in the preheated oven for approximately 25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool Layers: Allow the cakes to cool completely in the pans on a wire rack before gently removing them to avoid breaking.
- Prepare Frosting: While the cakes cool, prepare your vanilla buttercream frosting either using package instructions or your preferred homemade recipe.
- Assemble Cake Layers: Place the strawberry layer on your serving tray and spread a generous layer of frosting evenly over the top. Next, add the swirled strawberry-lemon layer and apply another layer of frosting. Top with the lemon layer and cover the entire cake with the remaining frosting to achieve a smooth finish.
- Decorate for Easter: Add the bunny ears on top, then position the nose and eyes to create the Easter Bunny face. Use a purchased Easter Bunny cake topper or decorate freehand using frosting or edible decorations.
- Serve: Slice into 8 to 8 generous slices and serve as a festive springtime dessert.
Notes
- You can swap 7 Up with any lemon-lime soda to add fizziness and flavor to the cake.
- Using three 6-inch pans creates perfect layers; if unavailable, use larger pans but adjust baking time accordingly.
- Ensure cakes are fully cooled before frosting to prevent melting or sliding.
- The swirl layer combines both flavors for a visually appealing and tasty middle layer.
- Decorate the bunny face to your preference with different edible decorations or toppers.
