  • 2 tablespoons butter
  • 8 ounces cremini or white mushrooms, sliced
  • 1/2 medium onion, chopped

  • 1/3 cup Marsala wine (dry or sweet Marsala wine works well)
  • 1 cup heavy cream or whipping cream
  • 1/4 teaspoon cornstarch
  • Salt and pepper, to taste
  • Chopped fresh parsley (optional, to taste)


Instructions

  1. Heat Oil and Butter: Add the olive oil and butter to a skillet over medium-high heat. Allow the butter to melt fully before proceeding to the next step.
  2. Sauté Mushrooms and Onions: Add the sliced mushrooms and chopped onions to the skillet. Cook, stirring occasionally, until the mushrooms release their moisture and it evaporates, and both mushrooms and onions are nicely browned and seared, about 10-12 minutes.
  3. Add Garlic and Mustard: Reduce the heat to medium. Stir in the minced garlic and Dijon mustard, cooking for about 30 seconds to release their flavors without burning.
  4. Deglaze with Marsala Wine: Pour in the Marsala wine and allow it to bubble and reduce gently for 30 seconds to 1 minute. Be careful not to let the wine evaporate completely, as it adds essential flavor to the sauce.
  5. Add Cream and Thicken Sauce: Pour in the heavy cream. In a small bowl, combine the cornstarch with 1/2 teaspoon of cold water to create a slurry, then stir this into the skillet. Cook the sauce for another 5 minutes, stirring occasionally, until it thickens to your preferred consistency.
  6. Season and Garnish: Season the sauce generously with salt and freshly ground black pepper. Stir in chopped fresh parsley if using. Serve the Marsala sauce immediately with your choice of main dish.
