  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced

Soup Base:

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can diced tomatoes
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 (1-ounce) packet taco seasoning
  • 2 cups beef broth
  • Salt and pepper to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped cilantro
  • Sliced jalapeños
  • Tortilla chips

Instructions

  1. Prepare Ground Beef Mixture: Heat olive oil in a large pot, sauté onion, and garlic. Add ground beef, cook until browned, and drain excess grease.
  2. Combine Ingredients: Add black beans, corn, diced tomatoes, tomatoes with green chilies, taco seasoning, and beef broth. Stir well.
