Description

French Beans with Caramelized Peaches and Balsamic Glaze is a delightful side dish that combines the freshness of French green beans with the sweetness of peaches, all brought together with a tangy balsamic glaze. Perfect for a summer meal or to accompany grilled meats.

Ingredients

Scale

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small shallot finely sliced
  • 2 cups fresh French green beans (haricots verts), trimmed
  • 2 ripe peaches sliced
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Optional for Garnish:

  • 1/4 cup crumbled goat cheese or feta
  • 1 tablespoon chopped fresh thyme or basil for garnish

Instructions

  1. Blanch the Green Beans: Bring a medium pot of salted water to a boil. Add the French beans and blanch for 2–3 minutes until bright green and just tender. Drain and transfer to an ice bath to stop the cooking. Drain again and pat dry.
  2. Caramelize the Peaches: In a large skillet, heat olive oil and butter over medium heat. Add the shallots and cook until softened. Add the peach slices and drizzle with honey. Cook until caramelized. Add the beans, balsamic vinegar, and season with salt and pepper. Cook until everything is coated in the glaze.
  3. Serve: Transfer to a platter, top with cheese if desired, and garnish with thyme or basil. Serve warm or at room temperature.

Notes

  • For a savory twist, consider adding crispy pancetta or toasted almonds.
  • This dish pairs well with grilled meats or as a vegetarian side.
