Seasoning & Spices
- 3 tablespoons olive oil
- 1 teaspoon salt
- Juice of 1/4 lemon
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/4 teaspoon cinnamon
- 1/2 teaspoon ground pepper
Garnish
- 60 grams feta cheese, crumbled (2 oz.)
- 2 tablespoons chopped parsley
- Juice of 1/4 lemon
Instructions
- Preheat the oven: Preheat your oven to 200°C (400°F) to prepare for roasting the vegetables.
- Prepare and toss veggies: In a large bowl, combine the cubed potatoes and red bell pepper with salt, olive oil, and juice of 1/4 lemon. Toss thoroughly to ensure an even coating of oil and seasoning.
- First roast: Spread the potatoes and peppers evenly on a greased baking tray. Roast in the preheated oven for 25 minutes, allowing the vegetables to start cooking and soften.
- Add spices: After 25 minutes, sprinkle the garlic powder, onion powder, paprika, oregano, cinnamon, and ground pepper evenly over the roasting potatoes and peppers. Stir to distribute the spice mix evenly.
- Final roast to crisp: Return the tray to the oven and roast for an additional 10-15 minutes until the potatoes are golden and crispy.
- Finish and garnish: Drizzle the roasted vegetables with the remaining lemon juice, then top with crumbled feta cheese and chopped parsley before serving to add fresh, tangy, and creamy flavors.
Notes
- For extra crispiness, you can parboil the potato cubes for 5 minutes before roasting.
- Feel free to substitute red bell pepper with yellow or orange peppers as preferred.
- The cinnamon adds a subtle warmth, but can be omitted if not preferred.
- This dish pairs perfectly with grilled meats or as a hearty vegetarian main when served with a salad.
- Use freshly squeezed lemon juice for the best flavor impact.
