Tuna Salad
- 2 cans (5 oz each) of tuna, drained
- 1 small cucumber, diced
- ½ small red onion, finely chopped
- 1 celery stalk, finely diced
- Salt and pepper, to taste
Green Goddess Dressing
- ½ ripe avocado
- ¼ cup plain Greek yogurt (or sour cream)
- 2 tablespoons mayonnaise (optional)
- 2 tablespoons lemon juice (freshly squeezed)
- 2 tablespoons olive oil
- 1 garlic clove
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped tarragon (or more parsley if unavailable)
- Salt and black pepper to taste
- Optional: 1–2 tablespoons water to thin the dressing
Instructions
- Make the Dressing: In a food processor or blender, combine the avocado, Greek yogurt, olive oil, freshly squeezed lemon juice, garlic clove, and all the fresh herbs (chives, parsley, basil, and tarragon).
- Blend Until Smooth: Blend the mixture until smooth and creamy. If the dressing is too thick, add 1 to 2 tablespoons of water to achieve the desired consistency. Season with salt and black pepper to taste.
- Prepare Tuna Mixture: In a large bowl, combine the drained tuna, diced cucumber, finely chopped red onion, and diced celery.
- Add Dressing: Pour the prepared Green Goddess dressing over the tuna mixture and stir until all ingredients are evenly coated.
- Season: Adjust the seasoning with salt and pepper according to your preference.
- Chill or Serve: You can serve the salad immediately or chill it in the refrigerator for 30 minutes to allow the flavors to meld.
- Enjoy: Serve the Green Goddess Tuna Salad in wraps, on toast, over fresh greens, or simply on its own for a light, nutritious meal.
Notes
- The mayonnaise is optional; omit it for a lighter or dairy-free option.
- If tarragon is unavailable, substitute with additional parsley for a fresh herb flavor.
- Chilling the salad enhances the flavors but serving immediately is perfectly fine.
