Wet Ingredients:
- 1/4 cup coconut oil (melted)
- 1/4 cup honey or pure maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened applesauce
Additional Mix-ins:
- 1/3 cup raisins or dark chocolate chips
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together the oats, whole wheat flour, baking soda, cinnamon, and salt.
- Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey or maple syrup, egg, vanilla extract, and applesauce until smooth.
- Combine Wet and Dry Mixtures: Add the wet ingredients to the dry ingredients and stir until fully combined.
- Add Mix-ins: Fold in the raisins or chocolate chips and nuts, if using.
- Bake: Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, flatten slightly, and bake for 10 to 12 minutes until lightly golden.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water).
- You can also swap raisins for dried cranberries or chopped dates.
