Ingredients
Scale
Tomatoes
- 4 large ripe tomatoes, sliced
Marinade
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh basil leaves, chopped
- 1 tablespoon fresh oregano leaves, chopped
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon dried red chili flakes (optional)
Garnish
- 1/4 cup crumbled feta cheese (optional)
- Fresh basil leaves for garnish
Instructions
- Prepare Tomatoes: Begin by washing the tomatoes thoroughly. Slice them into rounds about 1/4 inch thick and set them aside in a large mixing bowl.
- Mix Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, sea salt, and black pepper until well combined.
- Add Herbs and Garlic: Add the minced garlic to the olive oil mixture, followed by the chopped basil, oregano, and thyme. If you like a bit of heat, stir in the dried red chili flakes.
- Combine Tomatoes and Marinade: Pour the herb-infused olive oil mixture over the sliced tomatoes. Gently toss the tomatoes until they’re evenly coated with the marinade.
- Marinate: Cover the bowl with plastic wrap or a lid, and place it in the refrigerator for at least 30 minutes to let the flavors meld. For best results, marinate for 2 to 4 hours.
- Arrange for Serving: When ready to serve, arrange the marinated tomatoes on a serving platter. Optionally, sprinkle crumbled feta cheese over the top.
- Garnish: Garnish with additional fresh basil leaves for a beautiful presentation.
- Serve: Serve as a salad on its own or as a side dish alongside grilled meats, fish, or bread.
Notes
- Using ripe, fresh tomatoes enhances the flavors significantly.
- The red chili flakes are optional but add a pleasant spicy kick.
- Marinating longer (up to 4 hours) allows deeper flavor infusion.
- Feta cheese adds a creamy, salty contrast but can be omitted for a dairy-free version.
- This recipe is best served chilled or at room temperature.
