			Egg Mixture
- 8 large egg whites
- 1/4 cup cottage cheese
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
Vegetables & Cheese
- 1/2 cup spinach, chopped
- 1/4 cup red bell pepper, finely diced
- 1/4 cup shredded cheddar cheese (optional)
Other
- Nonstick cooking spray
Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Lightly spray a muffin tin with nonstick cooking spray to prevent sticking during baking.
- Blend Egg Mixture: In a blender, combine the 8 large egg whites, 1/4 cup cottage cheese, 1/4 teaspoon garlic powder, and salt and pepper to taste. Blend until the mixture is smooth and frothy, ensuring an even texture.
- Fill Muffin Cups: Pour the blended egg mixture evenly into the muffin tin cups, filling each about two-thirds full to allow room for expansion while baking.
- Add Vegetables and Cheese: Distribute the chopped spinach, finely diced red bell pepper, and optional shredded cheddar cheese evenly over the top of each filled muffin cup for added flavor and texture.
- Bake the Egg Bites: Place the muffin tin in the preheated oven and bake for 18 to 20 minutes, or until the bites are set and have a golden color around the edges.
- Cool and Serve: Let the egg bites cool briefly before removing them from the muffin tin. Serve them warm for best taste, or store in an airtight container for later enjoyment.
Notes
- For a dairy-free option, omit the cottage cheese and cheddar cheese or substitute with plant-based alternatives.
- Customize your egg bites by adding other vegetables such as mushrooms, tomatoes, or onions.
- These egg white bites can be stored in the refrigerator for up to 4 days or frozen for longer storage.
- Reheat gently in the microwave or oven before serving to maintain texture and flavor.
