Instructions

  1. Prep Ingredients: Chop onions and mince garlic. Open cans of tomato paste and tomatoes.
  2. Combine Spices: In a small bowl, mix oregano, basil, garlic powder, kosher salt, and crushed red pepper if using.
  3. Heat Oil and Sauté Onions: Heat a medium skillet over medium heat, add olive oil, swirl to coat, then sauté onions for 3-4 minutes until beginning to brown. If skipping onions, heat garlic alone for 1 minute, ensuring it doesn’t brown.
  4. Add Garlic and Spices: Stir in garlic and spice mixture, cook for 1 minute until fragrant.
  5. Add Tomato Paste: Stir tomato paste into the skillet, spreading it out and warming it through to deepen flavor.
  6. Add Tomatoes and Simmer: Pour in canned tomatoes, breaking them up with a wooden spoon. Simmer gently for 5 to 30 minutes, allowing flavors to meld; longer simmer for fuller taste.
