Ingredients
Scale
Potatoes
- 1 1/2 pounds baby potatoes (or potatoes cut into 1.5 inch cubes)
Cooking Fat
- 2 tablespoons olive oil (or butter)
Honey Mustard Sauce
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons grainy mustard
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, chopped
- 1/4 teaspoon paprika
- Salt and pepper to taste
Instructions
- Cook Potatoes: Place the baby potatoes in a large pot, cover them with water, and bring it to a boil. Cook the potatoes until just tender, which typically takes about 10 minutes. Drain the water thoroughly once done.
- Fry Potatoes: In a large skillet or pan, heat the olive oil or butter over medium heat. Add the cooked potatoes to the pan and fry them for approximately 10 minutes, stirring occasionally, until they develop a golden brown crust.
- Make Honey Mustard Sauce: In a small bowl, combine the honey, Dijon mustard, grainy mustard, apple cider vinegar, chopped garlic, paprika, salt, and pepper. Pour this sauce over the potatoes in the skillet. Toss well to coat all the potatoes evenly and cook for an additional 2-3 minutes to meld the flavors before serving.
Notes
- You can substitute baby potatoes with any small waxy potatoes for similar texture.
- If you prefer a richer flavor, use butter instead of olive oil for frying.
- Adjust the amount of honey and mustards to taste for sweetness or tanginess.
- Adding fresh herbs like parsley or thyme can elevate the dish.
- Ensure potatoes are not overcooked during boiling to avoid them becoming too soft when frying.
