- 3 tbsp Butter

- 8 oz Rotini Pasta (or gluten-free chickpea pasta as alternative)
- 3 cloves Garlic, minced
- 1 cup Heavy Cream
- 3/4 cup Grated Parmesan Cheese
- 1 tbsp Fresh Parsley, chopped
- 1/4 tsp Chili Flakes (optional)
Instructions
- Prepare the Steak Bites: Cut the steak into bite-sized cubes, pat dry with paper towels to remove excess moisture, then season with salt and black pepper evenly. This ensures flavor penetration and better searing.
- Sear the Steak: Heat olive oil and butter together in a skillet over medium-high heat until melted and shimmering. Add the steak bites and sear them for about 3-4 minutes, turning to brown all sides until golden brown but still juicy.
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook for 8-10 minutes until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
- Sauté Garlic: In the same skillet used for steak, add additional butter if needed and sauté the minced garlic until fragrant, about 1-2 minutes, being careful not to burn it.
- Create the Sauce: Pour the heavy cream into the skillet with garlic and heat gently to a simmer. Stir in the grated Parmesan cheese continuously until it melts smoothly into the sauce.
- Combine Pasta and Sauce: Add the cooked rotini into the skillet. Mix well to coat the pasta with the creamy Parmesan sauce. Use reserved pasta water a little at a time to loosen the sauce to your desired consistency.
- Finish the Dish: Return the seared steak bites to the skillet and combine gently to incorporate all elements. Warm through for a minute.
- Serve: Plate the creamy steak and rotini, garnish with fresh chopped parsley and optional chili flakes for a touch of heat. Serve immediately while hot.
