Description

Indulgent Steak Bites paired with cheesy rotini pasta in a garlicky Parmesan cream sauce, creating a rich and flavorful 30-minute meal perfect for a satisfying dinner.

Ingredients

Scale

Steak Bites

  • 1 lb Steak (sirloin or ribeye), cut into bite-sized cubes
  • Salt and Black Pepper, to taste
  • 1 tbsp Olive Oil
  • 3 tbsp Butter

Pasta & Sauce

  • 8 oz Rotini Pasta (or gluten-free chickpea pasta as alternative)
  • 3 cloves Garlic, minced
  • 1 cup Heavy Cream
  • 3/4 cup Grated Parmesan Cheese
  • 1 tbsp Fresh Parsley, chopped
  • 1/4 tsp Chili Flakes (optional)

Instructions

  1. Prepare the Steak Bites: Cut the steak into bite-sized cubes, pat dry with paper towels to remove excess moisture, then season with salt and black pepper evenly. This ensures flavor penetration and better searing.
  2. Sear the Steak: Heat olive oil and butter together in a skillet over medium-high heat until melted and shimmering. Add the steak bites and sear them for about 3-4 minutes, turning to brown all sides until golden brown but still juicy.
  3. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook for 8-10 minutes until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  4. Sauté Garlic: In the same skillet used for steak, add additional butter if needed and sauté the minced garlic until fragrant, about 1-2 minutes, being careful not to burn it.
  5. Create the Sauce: Pour the heavy cream into the skillet with garlic and heat gently to a simmer. Stir in the grated Parmesan cheese continuously until it melts smoothly into the sauce.
  6. Combine Pasta and Sauce: Add the cooked rotini into the skillet. Mix well to coat the pasta with the creamy Parmesan sauce. Use reserved pasta water a little at a time to loosen the sauce to your desired consistency.
  7. Finish the Dish: Return the seared steak bites to the skillet and combine gently to incorporate all elements. Warm through for a minute.
  8. Serve: Plate the creamy steak and rotini, garnish with fresh chopped parsley and optional chili flakes for a touch of heat. Serve immediately while hot.

Notes

  • Choosing ribeye steak adds richer flavor and tenderness to the dish.
  • Reserving pasta water is key to adjusting sauce thickness and helping it cling to the pasta.
  • Gluten-free rotini alternatives, such as chickpea pasta, work well for gluten sensitivities.
  • Chili flakes add optional heat but can be omitted for a milder flavor.
  • For a lower fat version, use half-and-half instead of heavy cream, though the sauce may be less rich.
