Instructions

  1. Preheat and Sauté: Preheat your oven to 375°F (190°C). In a medium oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 4 to 5 minutes until softened and translucent.
  2. Add Garlic and Veggies: Stir in the minced garlic and cook for about 30 seconds until fragrant. Add the black beans, corn, enchilada sauce, ground cumin, chili powder, and salt. Stir everything together and bring the mixture to a gentle simmer.
  3. Create Wells and Add Eggs: Using the back of a spoon, create 4 wells in the sauce mixture. Carefully crack one egg into each well, ensuring the yolks remain intact.
