Instructions

  1. Cook the bacon: Cook the bacon slices in a skillet over medium heat until they are crispy. Once cooked, crumble the bacon into small pieces and set aside.
  2. Prepare the corn: Depending on the type of corn used, prepare accordingly. For fresh corn, grill or boil the ears and allow to cool before cutting off the kernels. If using frozen corn, thaw it completely and drain any excess water. For canned corn, rinse thoroughly under cool water and drain well.
  3. Make the dressing: In a large mixing bowl, combine the softened cream cheese with sour cream or mayonnaise. Mix well until the mixture is smooth and creamy.

Combine salad ingredients: Add the prepared corn, chopped jalapenos, diced red bell pepper, sliced green onions, shredded sharp cheddar cheese, and most of the crumbled bacon into the bowl with the dressing.
