Description

This Korean Ground Beef and Broccoli recipe is a quick and flavorful dish that combines savory beef with tender-crisp broccoli in a delicious Asian-inspired sauce. Perfect for a busy weeknight dinner!

Ingredients

Scale

For the Beef:

  • 1 pound lean ground beef

For the Stir-Fry:

  • 2 cups broccoli florets (fresh or frozen)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)

For Garnish and Serving:

  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • Cooked white or brown rice

Instructions

  1. Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed.
  2. Add Aromatics: Add garlic and ginger, cook for 1 minute.
  3. Make Sauce: Whisk together soy sauce, brown sugar, sesame oil, rice vinegar, and red pepper flakes. Pour over beef.
  4. Cook Broccoli: Add broccoli to skillet, cook until tender-crisp.
  5. Thicken Sauce: If desired, add cornstarch slurry to thicken sauce.
  6. Garnish and Serve: Remove from heat, garnish with green onions and sesame seeds. Serve over rice.

Notes

  • You can pre-cook the broccoli to speed up the stir-frying process.
  • Try ground turkey or chicken as a lighter alternative.
  • For a gluten-free option, use tamari instead of soy sauce.
