Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and position the oven rack in the top third of the oven. Line a baking sheet with aluminum foil to ensure easy cleanup after baking.
  2. Prepare Vegetables: Using a mandoline slicer, slice the sweet potato into even thin slices approximately 4 mm thick. Trim the ends off the asparagus by snapping or cutting them off to ensure tenderness.
  3. Arrange and Season Sweet Potatoes: Place the sweet potato slices evenly across the prepared baking sheet, allowing for some overlap. Drizzle and coat them evenly with garlic powder, salt, pepper, and olive oil. Bake in the preheated oven for 15 minutes to begin softening the sweet potatoes.
  4. Add Salmon and Asparagus: After 15 minutes, remove the baking sheet from the oven. Arrange the asparagus on top of the sweet potato slices and clear space for the salmon fillets on the baking sheet. Lightly coat the salmon with a tablespoon of maple syrup to glaze it. Optionally, drizzle the remaining maple syrup over the asparagus and sweet potatoes for added sweetness.
  5. Finish Baking: Return the baking sheet to the oven and bake everything for an additional 15 minutes, or until the salmon is fully cooked and flakes easily with a fork, and the vegetables are tender to your preference.
  6. Serve: Remove from the oven and serve immediately. Optionally squeeze fresh lemon juice over the salmon for a bright finishing touch.
