Apple Filling
- 2 medium apples (peeled, cored, diced)

- 1 tsp vanilla extract
Dough and Topping
- 1 package premade pie dough
- Beaten egg (for egg wash)
- Coarse brown sugar (for sprinkling)
- 1 tsp cornstarch mixed with 1 tbsp water (cornstarch slurry)
Instructions
- Prepare the Apple Filling: In a saucepan, melt the unsalted butter and add the diced apples, brown sugar, and spices (cinnamon, nutmeg, allspice, ginger). Cook over medium heat until the apples are slightly softened, about 5-7 minutes. Stir in the vanilla extract and cornstarch slurry to thicken the mixture. Remove from heat and let cool completely.
- Prepare Dough Circles: On a floured surface, roll out the premade pie dough to an even thickness. Using a round cutter, cut out circles sized to fit into muffin tins for mini pies.
- Assemble Mini Pies: Grease a muffin tin lightly. Place a dough circle at the bottom of each muffin cup, pressing gently to line the cup. Spoon the cooled apple filling into each dough-lined cup. Cover each with another dough circle and seal the edges by pressing with fingers or a fork to prevent filling from leaking.
- Apply Egg Wash and Sugar Topping: Brush the tops of the mini pies with the beaten egg to give a golden finish. Sprinkle coarse brown sugar over each pie for added sweetness and crunch.
- Bake: Preheat the oven to 375°F (190°C). Place the muffin tin in the oven and bake the mini pies for about 25 minutes until the crust is golden brown and crisp.
- Cool and Serve: Remove from the oven and allow the mini pies to cool in the tin for 10 minutes before transferring to a wire rack. Serve warm or at room temperature as a sweet snack or dessert.
