Mushroom Filling
- 2 cups mushrooms, sliced (button or cremini mushrooms work well)

- 1/2 teaspoon thyme (optional)
- Salt and pepper, to taste
Sandwich Assembly
- 4 slices sourdough or any hearty bread
- 4 slices of cheese (Swiss, cheddar, or mozzarella)
- 2 tablespoons butter (for grilling)
Instructions
- Sauté the Mushrooms: In a large skillet, heat 2 tablespoons butter and 1 tablespoon olive oil over medium heat. Add sliced mushrooms and onions; sauté until mushrooms release moisture and become golden brown, about 7-10 minutes.
- Add Garlic and Thyme: Stir in minced garlic and thyme if using, cooking for 1-2 minutes more until fragrant. Season with salt and pepper. Remove from heat and set aside.
- Assemble the Sandwiches: Arrange bread slices on a flat surface. Evenly spread the sautéed mushroom and onion mixture over two slices of bread, then top each with a slice of cheese. Cover with remaining bread slices.
- Grill the Sandwiches: Heat a nonstick skillet or griddle over medium-low heat. Butter the outside of each sandwich with 1-2 tablespoons of butter. Place sandwiches in skillet and cook 3-4 minutes per side until bread is golden and cheese is melted.
- Serve: Remove sandwiches from skillet, cut in half if desired, and serve immediately while warm and crispy.
