Description

This Mushroom Sandwich Melts recipe features savory sautéed mushrooms and onions layered with melty cheese on hearty sourdough bread. Perfect as a comforting, quick meal or snack, these grilled sandwiches combine rich umami flavors with crispy, buttery bread for an irresistible melt.

Ingredients

Scale

Mushroom Filling

  • 2 cups mushrooms, sliced (button or cremini mushrooms work well)
  • 1 medium onion, thinly sliced
  • 2 tablespoons butter (for sautéing)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme (optional)
  • Salt and pepper, to taste

Sandwich Assembly

  • 4 slices sourdough or any hearty bread
  • 4 slices of cheese (Swiss, cheddar, or mozzarella)
  • 2 tablespoons butter (for grilling)

Instructions

  1. Sauté the Mushrooms: In a large skillet, heat 2 tablespoons butter and 1 tablespoon olive oil over medium heat. Add sliced mushrooms and onions; sauté until mushrooms release moisture and become golden brown, about 7-10 minutes.
  2. Add Garlic and Thyme: Stir in minced garlic and thyme if using, cooking for 1-2 minutes more until fragrant. Season with salt and pepper. Remove from heat and set aside.
  3. Assemble the Sandwiches: Arrange bread slices on a flat surface. Evenly spread the sautéed mushroom and onion mixture over two slices of bread, then top each with a slice of cheese. Cover with remaining bread slices.
  4. Grill the Sandwiches: Heat a nonstick skillet or griddle over medium-low heat. Butter the outside of each sandwich with 1-2 tablespoons of butter. Place sandwiches in skillet and cook 3-4 minutes per side until bread is golden and cheese is melted.
  5. Serve: Remove sandwiches from skillet, cut in half if desired, and serve immediately while warm and crispy.

Notes

  • You can use any hearty bread like whole wheat or rye instead of sourdough.
  • Feel free to swap or combine cheese types to suit your preference.
  • Adding thyme is optional but adds a lovely herbal note.
  • For a vegan version, substitute butter with plant-based spread and use vegan cheese.
  • Cook mushrooms slowly over medium heat for the best caramelization and flavor.
