Ingredients
Scale
Vegetables
- 1 lb mushrooms (baby bella’s, cremini, or button mushrooms)
- 1 medium onion or 2 small onions
- Chopped green onion (optional for garnish)
Other Ingredients
- 3 Tbsp olive oil
- 3 Tbsp sour cream
- Salt and pepper to taste
Instructions
- Prepare Ingredients: Finely chop the onions and slice the mushrooms into 1/4 inch thick pieces to ensure even cooking and maximum flavor release.
- Sauté Onions: Heat 1-2 tablespoons of olive oil in a medium non-stick pan over medium heat. Add the chopped onions and cook for a few minutes until they turn golden and caramelized, enhancing their natural sweetness.
- Sauté Mushrooms: In a separate large pan, heat the remaining 1-2 tablespoons of olive oil. Add the sliced mushrooms and cook until they are soft and tender. If the mushrooms release excess liquid, drain it off, leaving a little juice to retain moisture and flavor.
- Combine and Finish: Add the cooked onions to the mushrooms, stirring to combine. Remove from heat, then stir in 3 tablespoons of sour cream. Season with salt and pepper to taste. Garnish with chopped green onion if desired, and serve warm.
Notes
- Drain excess mushroom juice to avoid a watery sauce, but keep a little for moisture and flavor.
- Use baby bella or cremini mushrooms for richer flavor compared to button mushrooms.
- Optional green onion garnish adds freshness and a subtle crunch.
- Adjust sour cream quantity to preference for creaminess.
- Serve as a side dish, over grains, or as a topping for meats or toasted bread.
