- 1/2 Tbsp sea salt (for boiling potatoes)
Garlic Cream Sauce
- 1 Tbsp olive oil or butter
- 1/2 medium onion, finely diced
- 1 garlic clove, pressed
- 3/4 cup heavy whipping cream
- 1/2 tsp sea salt (for seasoning the sauce)
- 1/4 cup fresh dill, chopped
Instructions
- Prepare Potatoes: Scrub each potato clean with a scouring pad or the abrasive side of a dish sponge to remove about half of the thin skin. Leave bite-sized potatoes whole and cut larger potatoes into halves or quarters so all pieces are about 1 inch thick.
- Boil Potatoes: Place the prepared potatoes in a pot and cover with cold water. Bring to a boil over high heat. Add 1/2 tablespoon sea salt, then reduce heat slightly and boil for 15 to 20 minutes, or until potatoes can be easily pierced with a fork. Drain the potatoes well.
- Sauté Onion and Garlic: In a separate pan, heat 1 tablespoon of olive oil or butter over medium heat. Add the finely diced onion and sauté until golden and soft, about 4 to 5 minutes. Add the pressed garlic clove and sauté for an additional minute, stirring constantly to prevent burning.
- Make Garlic Cream Sauce: Pour in 3/4 cup of heavy whipping cream and add 1/2 teaspoon of sea salt (adjust to taste). Bring the mixture to a gentle boil, then reduce heat and let it simmer for 2 minutes until slightly thickened.
- Add Fresh Dill and Combine: Stir in the chopped fresh dill, then remove the sauce from heat. Pour the garlic cream sauce over the drained potatoes and toss gently to coat all pieces evenly. Cover the pan with a lid to keep warm until serving.

- Scrubbing the potatoes removes dirt and some skin but keeps enough to maintain texture and nutrients.
