Ingredients

Scale

Dry Ingredients

  • 3 cups rolled oats (not instant)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 1/2 cups milk (dairy or non-dairy)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup (or honey)
  • 2 large eggs, lightly beaten
  • 2 tablespoons melted coconut oil (or butter)
  • 1 teaspoon vanilla extract

Apple Topping

  • 2 medium apples, peeled, cored, and diced (Granny Smith, Honeycrisp, or your favorite baking apple)
  • 2 tablespoons brown sugar
  • 1 tablespoon melted butter
  • 1/2 teaspoon ground cinnamon

Optional Add-ins

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins or dried cranberries
  • 1/4 cup shredded coconut
  • Chocolate chips (dark, milk, or white)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking your oatmeal apple breakfast bake.
  2. Prepare the Apple Topping: Peel, core, and dice the apples into 1/2-inch pieces. In a medium bowl, combine the diced apples with brown sugar, melted butter, and cinnamon. Toss thoroughly until the apples are evenly coated, then set aside.
  3. Combine Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt to evenly distribute the spices and leavening agents.
  4. Mix Wet Ingredients: In a separate bowl, whisk the milk, unsweetened applesauce, maple syrup (or honey), lightly beaten eggs, melted coconut oil (or butter), and vanilla extract until smooth and well combined.
  5. Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients. Gently stir until just combined, taking care not to overmix to maintain a good texture in the bake.
  6. Add Optional Ingredients: If desired, fold in optional mix-ins such as chopped nuts, raisins or dried cranberries, shredded coconut, and chocolate chips for added flavor and texture.
  7. Prepare Baking Dish: Grease a 9×13 inch baking dish with a little butter or cooking spray to prevent sticking.
  8. Assemble the Bake: Pour the oatmeal mixture evenly into the prepared baking dish and spread it out smoothly. Then, evenly arrange the apple topping mixture over the surface of the oatmeal base.
  9. Bake: Place in the preheated oven and bake for 35-40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean, indicating it is cooked through.
  10. Cool and Serve: Remove the bake from the oven and let it cool for 10-15 minutes before cutting and serving. This allows it to set nicely for easy slicing.

Notes

  • Use rolled oats, not instant, for the best texture and structure.
  • Choose your favorite baking apples; Granny Smith offers tartness while Honeycrisp adds sweetness.
  • You can substitute maple syrup with honey for sweetness.
  • Melted coconut oil can be replaced with butter depending on your preference.
  • Optional add-ins like nuts, dried fruit, shredded coconut, or chocolate chips enhance flavor and texture but can be omitted.
  • For a dairy-free version, use plant-based milk and coconut oil.
  • Letting the bake cool before serving helps it firm up for neat portions.
