Description

This comforting Parmesan Pasta Soup is a creamy and flavorful dish perfect for a quick weeknight meal. Combining sautéed aromatics, tender pasta, and rich Parmesan cheese in a savory broth with tomatoes and herbs, this soup comes together in just 30 minutes to serve 4 warm, hearty portions.

Ingredients

Scale

Soup Base

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained

Pasta and Seasonings

  • 1 cup small pasta (such as elbow macaroni, small shells, or ditalini)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • Salt and pepper to taste

Cheese and Garnish

  • 1 cup grated Parmesan cheese, plus more for garnish
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it softens and becomes translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant, taking care not to burn it.
  2. Add the Broth and Tomatoes: Pour in the chicken or vegetable broth and the can of diced tomatoes including their juice. Stir in the dried oregano and basil. Bring the mixture to a boil over medium-high heat.
  3. Cook the Pasta: Once boiling, add the small pasta to the pot. Reduce the heat to a simmer and cook for 8-10 minutes, or until the pasta is tender but still al dente, stirring occasionally to prevent sticking.
  4. Stir in the Parmesan: Remove the pot from heat or reduce to very low. Stir in the grated Parmesan cheese gently until melted and the soup becomes creamy. Taste the soup and add salt and pepper as needed to adjust the seasoning.
  5. Serve: Ladle the soup into bowls and garnish with extra Parmesan cheese and fresh basil or parsley if desired. Serve hot for the best flavor and enjoy your comforting meal!

Notes

  • Use small pasta shapes for even cooking and a better texture in the soup.
  • You can use either chicken or vegetable broth depending on your preference or dietary needs.
  • For a vegetarian version, ensure to use vegetable broth and optionally substitute Parmesan with a vegetarian-friendly cheese.
  • If you want a thicker soup, reduce the broth slightly or add more Parmesan cheese for creaminess.
  • This soup is best served fresh but can be stored in the refrigerator for up to 3 days. Reheat gently to avoid overcooking the pasta.
