- 3 Georgia Peaches (pitted, peeled, and diced)
- 1/2 red bell pepper (seeded and diced)
- 1/8 cup red onion (diced)
- 1/4 cup fresh cilantro (chopped)
- 1 lime (zested and juiced)
- 1/2 jalapeno pepper (seeded, pith removed, and minced)
- 1/2 teaspoon garlic (minced or chopped)

- 1/8 teaspoon salt
Instructions
- Prepare Ingredients: Begin by carefully pitting, peeling, and dicing the Georgia peaches. Dice the red bell pepper and red onion, chop the fresh cilantro, zest and juice the lime, mince the garlic, and seed, remove pith, and mince the jalapeno pepper. Gather all prepared ingredients into a large mixing bowl.
- Combine and Adjust: Toss all the ingredients together gently in the bowl to combine. Taste your salsa, then adjust the seasoning by adding more salt or lime juice according to your preference for enhanced flavor.
Notes
- For less heat, remove the seeds and membranes from the jalapeno completely.
- This salsa is best served fresh but can be refrigerated for up to 2 days.
- Great as a topping for grilled chicken or fish, or served with tortilla chips.
- To peel peaches easily, blanch them in boiling water for 30 seconds then transfer to ice water.
