Ingredients
Scale
Peanut Butter Filling
- ½ cup creamy peanut butter
- 3 Tablespoons salted butter, room temperature
- 2 Tablespoons granulated sugar
- ½ teaspoon salt
- ¾ cup powdered sugar
Other Ingredients
- 60 mini pretzel twists
- ¾ cup dark chocolate chips
- ¾ cup white chocolate chips (optional)
Instructions
- Prepare Baking Sheet: Line a large baking sheet with parchment paper and set aside for assembling the pretzel bites.
- Make Peanut Butter Mixture: In a mixing bowl, combine the peanut butter, softened salted butter, granulated sugar, and salt. Beat on medium speed until the sugar dissolves and the mixture becomes smooth and creamy.
- Add Powdered Sugar: Gradually add the powdered sugar while mixing on low speed, blending fully until the dough is uniform.
- Arrange Pretzels: Lay out 30 mini pretzel twists on the prepared baking sheet as the base layer for the bites.
- Form Filling Balls: Dust your hands lightly with powdered sugar, then scoop out and roll the peanut butter mixture into small balls approximately 1 inch in diameter. Place each ball in the center of a pretzel on the baking sheet.
- Create Sandwiches: Top each peanut butter-filled pretzel with a second pretzel, pressing gently to form a sandwich about 1 inch thick. Return the sandwiches to the baking sheet.
- Chill to Firm: Refrigerate or freeze the pretzel sandwiches for 20 to 30 minutes to let them firm up before dipping.
- Melt Chocolate: Place the chocolate chips in a small microwave-safe bowl. Microwave in 15-second intervals, stirring after each until melted and smooth. Avoid overheating.
- Dip Pretzel Bites: Remove the sandwiches from the fridge and dip each halfway into the melted chocolate. Let the excess chocolate drip off, then return to the baking sheet.
- Add Decorations: Optionally, sprinkle toppings on the chocolate before it sets. Return the baking sheet to the refrigerator for another 15 minutes or until the chocolate coating hardens.
- Serve or Store: Serve immediately or keep chilled until ready to enjoy these irresistible peanut butter pretzel bites.
Notes
- Dusting your hands with powdered sugar helps prevent the peanut butter mixture from sticking while rolling.
- You can use only dark chocolate chips or white chocolate chips if preferred; white chocolate is optional.
- For a firmer bite, freeze the sandwiches instead of refrigerating before dipping.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Adding sprinkles or nuts on top of the chocolate coating adds extra texture and visual appeal.
