Description

These Protein Oatmeal Breakfast Cookies are a delicious and nutritious way to start your day. Packed with protein, fiber, and natural sweetness, these cookies are perfect for a quick and satisfying breakfast or snack.

Ingredients

Scale

For the cookies:

  • 2 cups old-fashioned oats
  • ½ cup vanilla protein powder
  • ½ cup peanut butter (or almond butter)
  • ¼ cup honey or maple syrup
  • 2 ripe bananas (mashed)
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ cup mini chocolate chips (optional)
  • ¼ cup chopped nuts or seeds (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, mash the bananas, then stir in the peanut butter, honey, and vanilla extract until smooth.
  3. Add dry ingredients: Add the oats, protein powder, cinnamon, and salt. Stir until well combined.
  4. Include optional ingredients: Fold in the chocolate chips and nuts or seeds, if using.
  5. Bake: Scoop about 2 tablespoons of dough per cookie onto the baking sheet, flattening slightly. Bake for 12–14 minutes until set and golden.
  6. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a nut-free version, use sunflower seed butter.
  • These cookies freeze well and are perfect for meal prep.
  • Use a plant-based protein powder to keep the recipe vegan.
