  • 1 ¾ cups old-fashioned rolled oats
  • 1 cup canned pumpkin puree
  • ½ cup almond butter or peanut butter
  • â…“ cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips or chopped nuts (optional)


Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, combine the pumpkin puree, almond butter, maple syrup, egg, and vanilla extract. Whisk until smooth.
  3. Add Dry Ingredients: Add the oats, cinnamon, pumpkin pie spice, baking soda, and salt, stirring until fully incorporated. Fold in chocolate chips or nuts if using.
  4. Bake: Pour the batter into the prepared pan and bake for 22–25 minutes until edges are golden and a toothpick comes out clean.
  5. Cool and Slice: Allow the bars to cool in the pan before slicing into squares.

Notes

  • For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mixed and rested for 5 minutes).
  • Bars can be stored in the refrigerator for up to 5 days or frozen for up to 2 months.
