  • 1/2 teaspoon pumpkin spice
  • 1 tablespoon honey
  • 1.5 cups vanilla Greek yogurt
  • 1/2 cup milk
  • 1/2 cup granola


Instructions

  1. Mix Pumpkin Base: In a small bowl, combine the pumpkin purée, pumpkin spice, and honey. Adjust the sweetness by adding more honey if desired, making sure the mixture is evenly blended.
  2. Prepare Yogurt Mixture: In a separate bowl or large measuring cup, stir together the vanilla Greek yogurt and milk until smooth and well combined.
  3. Layer Ingredients: Using popsicle molds, layer spoonfuls of the yogurt mixture, the pumpkin spice mixture, and granola alternately until the molds are filled. Use a small spoon to press out any air bubbles for an even texture.
  4. Insert Popsicle Sticks: The mixture will be fairly thick, allowing you to insert the popsicle sticks immediately. If the sticks are loose or falling out, place the molds in the freezer for about 2 hours until the mixture firms up slightly, and then insert the sticks.
  5. Freeze Completely: Freeze the popsicles for at least 6 hours or overnight to ensure they are fully set. Once frozen, remove them from the molds and store in a large ZipLoc bag in the freezer for convenience.

Notes

  • For a sweeter taste, increase the amount of honey to your preference.
  • If you want a thicker texture, reduce the milk slightly or use less milk than specified.
  • Granola adds a nice crunch but can be omitted or replaced with nuts or seeds for different textures.
  • These popsicles can be stored in the freezer for up to 1 month.
  • To release popsicles from molds easily, run warm water over the outside of the mold for a few seconds.
