Potatoes:
- 2 pounds Yukon Gold potatoes (peeled and cut into chunks)
Roasted Garlic:
- 1 whole head of garlic
- 1 tablespoon olive oil
Mashed Potatoes:
- 1/2 cup unsalted butter (softened)
- 1/2 cup whole milk (warmed)
- 1/2 cup sour cream
- 1 1/2 teaspoons salt (or to taste)
- 1/2 teaspoon black pepper
- Chopped fresh chives or parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Roast garlic: Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
- Cook potatoes: Boil potatoes until fork-tender, then drain and return to pot.
- Mash potatoes: Squeeze roasted garlic cloves into potatoes, add butter, warm milk, sour cream, salt, and pepper. Mash until smooth and creamy.
- Adjust seasoning: Taste and adjust seasoning as needed. Garnish with chives or parsley before serving.

- For extra richness, use heavy cream in place of milk.
