Roasted Garlic:

  • 1 whole head of garlic
  • 1 tablespoon olive oil

Mashed Potatoes:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup whole milk (warmed)
  • 1/2 cup sour cream
  • 1 1/2 teaspoons salt (or to taste)
  • 1/2 teaspoon black pepper
  • Chopped fresh chives or parsley for garnish (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Roast garlic: Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
  3. Cook potatoes: Boil potatoes until fork-tender, then drain and return to pot.
  4. Mash potatoes: Squeeze roasted garlic cloves into potatoes, add butter, warm milk, sour cream, salt, and pepper. Mash until smooth and creamy.
  5. Adjust seasoning: Taste and adjust seasoning as needed. Garnish with chives or parsley before serving.
